Here is a unique way to transform a simple breakfast meal into something that children of all ages will most certainly enjoy. I had a lot of fun experimenting with different ingredients and settled on this recipe. As a guideline, try using the green vegetables in the same proportion as the size of one farm fresh egg (if you can get them locally). If you want to get the eggs looking a lot greener, try increasing the green vegetable content until you get the look you want. The uncooked mixture will look more yellow than the cooked version.

If you are a parent, may I suggest you get a copy of the book and read it to your children while you prepare this healthy treat? This recipe was most definitely inspired by the critically acclaimed book Green Eggs and Ham, by Dr. Seuss. To view an animated version of the book, check out the YouTube link attached.

You can experiment with other green vegetables (like spinach,zucchini and green beans) to maintain the look or get creative and try other vegetables. Just remember that adding other coloured vegetables will change the overall colour of the scrambled eggs. For example, adding mushrooms that are liquefied in the egg mixture, will create a sort of muddy colour. You might just add those chopped up with the ham, doing the same with red peppers or red onion.

The second picture shows how adding more green vegetables will help get the desired colour we are looking to present. The latter batch was done with green pepper, green onion and 2 broccoli flowerettes instead of one like the picture at the top of this hub.

The real magic here is to pay tribute to Sam-I-am and the innovative creations of Theodor Seuss Geisel by making an everyday breakfast into a magical adventure. Being a child is just a state of mind for one who has it wide open to anything new or different.

You might consider serving this as a Christmas morning treat and show "How the Grinch Stole Christmas" since the predominant colours here are shades of red and green.

Yields: Enough for 1 adult or a couple of small children

The stuff you need

  • 1 Egg
  • 2 tablespoons Milk
  • 1 teaspoon Margarine
  • 2 Pieces of Broccoli, broken up into small pieces. I use a flowerette but a piece of stalk would do nicely
  • 1 Piece of Green Pepper, cut into smaller pieces
  • 1 Green Onion stalk, trim at both ends and cut into pieces
  • 1 tablespoon Sour Cream
  • 1 slice Black Forest Ham, chopped
  • 1 non-stick skillet
  • 1 immersible hand-held blender, complete with mixing cup

Cooking instructions for Green Eggs and Ham

  1. Put all the ingredients except the ham into a tall mixing measuring cup. Use a hand-held mixer/blender (like my Cuisinart Smart Stick) and liquefy the ingredients on high. Keep the blades of the mixer immersed for about 15 to 20 seconds. We are trying to get the mixture to froth as much as Alka Seltzer.The more bubbles you get the better which will make the eggs very fluffy.
  2. Pour the blended ingredients into a non-stick pan that is heated to about medium. It is probably a good idea to "butter" the pan just the same to avoid sticking.
  3. Add the chopped up ham and scramble up the whole works.
  4. Cook until you don't see anymore liquid coming out of the mix.
  5. Serve on toasted and buttered bread or English muffins. You might add some honey to the bread before spooning the scrambled eggs on top. That gives it that little taste of sour, little taste of sweet that those TV chefs with an attitude talk about. I'm working on a green drink to go along with this meal. The first thing that comes to mind is a Kiwi and milk smoothie but I'm open to any ideas at all.

On the other hand

I guess I could read the nutrition values of all the ingredients from their package and/or look them all up on the Internet and then add them all up, but it sort of takes the fun out of this meal which doesn't seem to fit well here.

Personally, I prefer green eggs and bacon. I use 3 slices cookied in the microwave on a plate with 2 paper towels/bacon/1 paper towel on high for 2:30 which makes the bacon extra crispy which is how I like it done. The fat gets absorbed into the towels. Let the towels cool for a bit before you throw them out into a plastic kitchen garbage bag. The heat can cause the bottom seam to come undone which means you get a mess in your waste basket or on the way to the garbage chute/trash can.
